Why do you love Chicago Cut? Is it the navy-jacketed waiters with scarlet-red ties, ducking and running to fill your every request? Is it the prime steaks, dry-aged on site for a month to 40 days? The truffled scalloped potatoes, layered with hunks of pork belly and Swiss chard? Or maybe the wine list, vast but presented on iPads for swift scrolling?
