Ethyl's Beer & Wine Dive opening this weekend

There's paper over the windows at Francesca's Forno, but don't for a second think that Scott Harris (Francesca's, Purple Pig, Davanti Enoteca, TOC Lifetime Achievement Award recipient) is taking a time out. While the Forno space remodels into Panza (a bruschetteria and wine bar...kind of like Harris's Di Sotto Enoteca) and Glaze (a doughnut shop...hopefully kind of like this one), word came via Chicago magazine's Dish that Harris would be opening Ethyl's Beer & Wine Dive, a casual restaurant and bar aimed toward UIC students, this Sunday. Jaysen Euler, formerly of Stanley's Kitchen, will be putting out bar food with trendy ingredients: beer-battered cheese curds, Pimento mac-and-cheese, chicken-and-waffles (Check out the full menu after the jump!). Meanwhile the beverage menu is geared toward value, with wines available in 2.5-ounce and 5-ounce pours (as well as by the bottle) and an incredibly extensive selection of beer in cans (seriously, almost 50). This week: PBR. Next week: The world.
Ethyl's (324 S Racine Ave, 312-433-0007) opens this Sunday, June 19, at 5pm and will be open for dinner only for the first week; after that, the hours are 11am–2am daily and until 3am on Saturdays.

R.I.P. Stanley’s – Ethyl (aka. Scott Harris) killed you! I don’t know where to start…. I want to cry. The mixed drinks are now smaller and cost twice as much. (Not very ‘Dive’ like). You ran out of Bacardi Rum before I got to order my first drink. (What kind of bar runs out of Bacardi L&D) It was replaced it with bottom shelf spiced rum that I wouldn’t use to degrease my tools with. My meal was below average at an overpriced price. Gone is the kitchy Route 66 Theme bar and restaurant. Replaced with generic cleaned up corporate template and much higher prices. Gone are the pretty waitresses in tee-shirt’s - replace with a guy in a red polo. Gone are the all you can eat peanuts and throw them on floor. Gone is the Chips and Dip. Gone is the Turkey Ruben. Gone is Route 66 Burger. Gone is the open MIC night. Gone are the Flat Screen TV’s. Gone is the Route 66 Sign. Gone are the high ceilings and original stained glass windows – replaced with arches and soffits’. It’s no longer a fun bar – it just went corporate. Heck – the cops no longer eat there. Scott Harris – I hate you for sucking the soul out of a real Dive Bar and replacing it with this pathetic substitute. Just change the name to Bennigans or Chile’s and get it over with. PS – Just because you put the word ‘Dive’ in the name doesn’t make it a real dive bar. You have to offer some type of value (ie. Quality food at lower than average cost)to be a dive bar. I demand you (Scott Harris) take the word ‘Dive’ out the name, you trader!

To "demanding patron"...you need to move forward, dude. Scott Harris has done himself proud with this retake! I had the pulled pork nachos and others in my group had the burger and chicken and waffles and we all can't say enough about how great it all was. Not to mention the "beers" we tested out! WOW! Great people, knowledgeable servers and CUTE, and, oh yes, fresh and clean surroundings. Note to all: A dive does NOT have to be dirty! Get real! Satisfied and Happy!
