EXCLUSIVE VIDEO: Announcing RM, a Champagne lounge
For a while now, Jared Van Camp has been dropping hints about a lounge adjacent to Nellcôte, his forthcoming "refined dining" spot. Today, that side project has a name: RM, a "high style Champagne salon" at 116 N Green St in February.
The name comes from a designation for grower's Champagne (Récoltants Manipulants), but if the trailer for the restaurant (above) is any indication, RM hopes to peel away at some of the stigmas we associate with Champagne. "I want to break away from the intimidating aspects of Champagne," RM's partner and sommelier Jason Wagner says in a press release. Wagner, who previously worked in New York at restaurants such as A Voce and L’Atelier de Joël Robuchon (where he was the wine director) is opening RM with Element Collective, the group behind Nellcôte, and like Nellcôte, RM has a muse—Grace Kelly. The place will reportedly be big on fresh flowers, candlelight, esoteric cheeses and dainty pastries by a yet-to-be-announced pastry chef. RM will also be pouring Champagne on cheese, just because they can. Or maybe they have a better reason—it's not really explained in the video above. But damn if it doesn't look decadent.
