Preview: The Trenchermen’s cocktail menu

The only Trencherman not pictured: Tona Palomino, whose cocktails were featured at a preview at Bar DeVille last night.

The Trenchermen is popping up everywhere these days. Last night the Mike Sheerin/Patrick Sheerin/Matt Eisler/Kevin Heisner restaurant-in-waiting showed its face in the back room of Bar DeVille for what was dubbed the Trenchermen Beverage Salon, or the chance to guzzle cedar-infused whiskey and meet WD-50 vet Tona Palomino, who will be designing all the drinks at the Trenchermen when it opens in February…or March, Heisner said last night over a Bourbon Bimbo. Which is not a Valley girl drinking Jim Beam, but one of the five cocktails Palomino previewed, starting at 7pm for media and open to the public at 9pm. With whole lemon wheels used to infuse the bourbon with a sweet acidity, it lightened up the spirit so much I would have never guessed what I was drinking. Very refreshing. The Push the Wood was my other favorite, with that smoky cedar-infused whiskey and a beautiful depth added from a hint of coffee. The opening beverage menu hasn’t yet been set, and will likely have all new offerings based on what’s in season, but the list below of what was on tap* last night gives an idea of what to expect.

*Not literally, though Eisler did say the restaurant is looking to have cocktails on tap.

AMBROSIA
Silver tequila, honey, lemon, orange bitters, egg white

GREEN HORNET
Celery gin and tonic

BOURBON BIMBO
Lemon bourbon, Domaine de Canton ginger, burnt lemon

PUSH THE WOOD
Cedar whiskey, sweet and dry vermouth, coffee rinse

The Trenchermen (2039 W North Ave, no phone yet) takes over the old Spring space in February or March.
