Carriage House's menu full of Southern-inspiration

Carriage House, the upcoming project from chef Mark Steuer, is still aiming for a September 1 opening. But do you really want to wait that long to see what's on the menu? That's what we thought. So we've put a draft (no promises) of the (punctuationless) menu, full of traditional—and some not-so-traditional—Southern-inspired dishes, after the jump.

carriage house rolls… benne seed, honey butter

lowcountry oyster roast… cheek bacon, tomato jam, crispy leek

a refreshing cucumber salad... watermelon, scallion, cane syrup vinaigrette, sea salt

tender braised pig’s feet… collard greens, house vinegar, chilies

my favorite slaw… cabbage, carrot, red onion, peach, cilantro, creamy cider dressing, cracklins

simple tomato sandwich… pullman loaf, aioli, avocado, chives, bourbon salt, cracked pepper

charleston hushpuppies… crab, sweet corn, mustard remoulade

shrimp and grits… sc shrimp, heirloom grits, hunter gravy

fried green tomatoes… shaved tasso ham, buttermilk aioli, pickled shrimp, cucumber

charleston she crab soup… drop biscuit, crab meat, sherry gastrique

baked grits… roasted wild mushrooms, truffle vinaigrette, coddled farm egg, Thomasville tomme

skillet cornbread…bacon, foie gras butter, peach jam

carolina gold rice balls… pimento cheese, pork neck gravy

char-grilled sweet corn… foie gras butter, chili vinegar, black garlic aioli, georgia gouda

pig’s ear salad… butter lettuce, kohlrabi, blackberries, peanut granola, creole mustard vinaigrette

foie gras torchon… peach preserves, fried cornbread, bourbon mustard

ham hocks… butterbean salad, vidalia onion ring, okra, apple, basil vinaigrette

pork belly… watermelon, blue crab, boiled peanut, pepper jelly, crustacean vinaigrette
