You'd think a wine expert like TOC Food & Drink editor David Tamarkin would be put off by South Loop bar Square One's self-serve wine machines. But no: He couldn't be happier about the newfound ease, approachability and affordability of wine in Chicago, and these bars and restaurants are at the forefront of the movement. Also pushing along this refreshing mindset are six young sommeliers who are busting the image of the huffy wine steward. Speaking of sommeliers, Check Please! host Alpana Singh, a master sommelier and all-around cool-as-hell person, is opening her own wine-focused restaurant, the Boarding House. Is Chicago ready?
