Bruce Finkelman and Craig Golden, the duo that opened Longman & Eagle, the Empty Bottle and other spots, open their new restaurant/bar/event space Thalia Hall (1227 W 18th St) tonight.
The space includes Dusek’s Board & Beer, Punch House and a music hall, and it’s the first of the multi-venue restaurants that we’re going to start seeing more of (see also Chop Shop, Eataly and others).
Thalia Hall is a late 19th century building in Pilsen that John Dusek built to house storefronts, residences and a community hall, and Finkelman said that “the property and history really spoke to us, to what we wanted to do.”
They created Dusek’s, a beer-focused restaurant in which the food is specifically paired with beer. Cicerone Will Duncan assembled the beer list, which Finkelman says will incorporate anything Duncan finds interesting and includes two dozen beers on tap. Longman & Eagle chef Jared Wentworth created the menu, which is designed to pair with beer. There’s a whole oyster menu and seafood towers, along with grilled sardines, flounder crudo, and pear salad, plus dishes that would be at home at Longman—crispy pig tails and a country ham sampler.
