Martial Noguier goes downscale with his own bistro.
Martial Noguier made his name cooking for Michael Jordan (and the rest of us) at one sixtyblue. He then jumped that ship to go work for the Sofitel (hotel gigs, with their benefits and robust resources, are covetable positions for some chefs). What would make Noguier jump ship again? The prospect of his own place. Bistronomic, which he’s opening with the team that owns the bar Downtown, is the restaurant Noguier says he’s wanted to build for years: French, seasonal and refined, but also somewhat accessible. That translates into dishes such as pan-roasted duck breast and a Belgian endive salad, all of which are accompanied by a wine list heavy on bottles from the Pacific Northwest. 840 N Wabash Ave (312-944-8400).
