DREAM TEAM If you’re only as strong as your weakest link, Dana Hotel & Spa is making sure its restaurant ajasteak is titanium-solid. To execute the sushi-steakhouse combo, the powers that be appointed a culinary director, an executive chef and an “Asian specialty chef” who have buckets of experience with NYC big guns, from Jean-Georges Vongerichten and Alain Ducasse to Iron Chef Morimoto. The menu brims with ingredients like Kobe and golden big-eye snapper and the stylish space sports a “floating” cantilevered sushi bar. That kind of recipe for success could only flop if, well, the food’s not good. Slated to open Fri 13 at 660 N State St at Erie St (312-202-6000).
