Hot buttered rum

This holiday classic tastes exactly like what the name implies: warm water or, better yet, apple cider, mixed with clove and rum, sprinkled with a little cinnamon and topped with a tiny pat of butter, which lovingly coats the drink’s surface with droplets of fat. It looks like a disaster, but that fat balances the spices and creates a pleasing creamy texture. If you’re looking for the basic version in all its mad glory, slip into a suit and visit the Bar at the Peninsula Hotel (108 E Superior St, 312-573-6766) for its $14 version.
