Next best thing?
Grant Achatz's new bar and restaurant could open this fall-or not.
Here’s what we know about Grant Achatz’s forthcoming projects: The first, Next Restaurant, will serve four menus a year. Those menus will be inspired by not just a place (say, Sicily), but also a time (1977). They’ll consist of five courses or so, and cost anywhere from $40 to $75, depending on when you eat it (the restaurant will operate via a ticket system, and prime times, such as Saturday night, will cost more than, say, Tuesday at 5pm). Adjacent to Next will be Aviary, a bar with no bar and no visible bartenders—a lounge of sorts. Of course, with chef Achatz at the helm, there’s really no way to predict what either place will be like. The only thing we know is they will open—possibly in the fall, but based on what we’re hearing at press time, more likely in the winter. 953–955 W Fulton Market, nextrestaurant.com.
