Graham Elliot, sandwich slinger?
If I had a quarter for every time I've wished Chicago had a 'Wichcraft, I'd have enough money to call Tom Colicchio and franchise one myself. But it looks as if I can stop saving my change: Graham Elliot Bowles (of the eponymous graham elliot) is looking for spaces to open the first of what could be many sandwich shops, tenatively named graham elliot, etc.
"We have Jimmy John's and Potbelly, and they're great, but there's no real chef-focused place like that in the city," he correctly points out (Frontera Fresco being the exception). Bowles's idea is simple but it already has me hungry: Panini, housemade sodas, seasonal milk shakes (like strawberry-rhubarb) and, of course, "a bunch of flavored popcorn." He's looking in River North, Streeterville and Wicker Park for the right space. No word yet from Colicchio on how he feels about being kicked out of my daydreams.
