Dirty Betty's, a popup doughnut shop, opens May 18

These are not Dirty Betty doughnuts. But they look good, right?
Haven't been able to snag a doughnut from Doughnut Vault? Don't panic: Next week, more doughnuts come on the scene. Dirty Betty's, a daily popup doughnut shop from Jeff Steinberg and Joe Bova of Cookie Bar, opens May 18th.
"It was in our plan since we opened Cookie Bar," says Steinberg. "But it just took us a while to get all the recipes down. We want them to taste like a real doughnut."
But aren't Dirty Betty's doughnuts going to be, um, "real"? Yes and no. Steinberg and Bova aren't frying their doughnuts. Instead, they're baking them to ensure they're moist. (He also mentions that baking doughnuts means there's less calories and fat. But if you're eating a doughnut you're probably not concerned with that.)
So far the menu includes 10 different flavors, including plain, banana with chocolate nutella glaze, pomegranate, rum-soaked raisin with rum glaze, lemon blueberry and a doughnut that is half doughnut, half brownie. They range from $2 to $2.25.
The shop will open Monday through Fridays from 7–10am, and on Saturdays from 10am–10pm.
Dirty Betty's will open Wednesday May 18 at the Cookie Bar location, 2475 N Lincoln Ave (773-348-0300).
