Paul Kahan to open butcher shop

Per the Stew, Paul Kahan and the crew behind the Publican, Avec, Blackbird and Big Star will be opening a butcher shop in the West Loop in six to ten months. "The idea for the butcher shop comes from the fact that we’ve outgrown our space at this point," Kahan told the Stew, hence the shop will be used to craft sausages for the Publican, but will also sell meats retail and serve rustic-sounding breakfast and lunch. Since Feast leaked this video in October, most have known that Kahan et al had another project in the works near the Publican, although the team insisted it was not a restaurant. Re-watching this video does reveal a touch of foresight on Kahan's part. He says he didn't want to divulge the concept of the next project because it takes his team so long to open places that folks would beat them to the punch. Sure enough, last month we reported that Rob and Allie Levitt will open their butcher shop, Butcher & Larder,  possibly as early as this week, according to the Reader.
