After closing Tizi Melloul, owners Michael Schimmel and Steven Ford opened this barbecue joint with former Tizi chef Jason Heiman at the helm. The chicken takes in a noticeable touch of smoke, but aggressively dry-rubbed ribs fare better. Macaroni shells in creamy white cheddar with an au gratin topper and molasses-thick beans studded with burnt ends show promise. And the pork-belly pastrami special (availability varies), streaked with glistening fat and rightly tart from a proper cure, shows that Heiman isn’t fumbling around in the dark.
