At chef Michael Shrader’s small plates spot—hell, at every small plates spot—the beginning and end of the meal are the easiest parts. Here that means starting with beautiful West Coast oysters and head-on, butter-dredged shrimp, and ending with pastry chef Mitsu Nozaki’s exemplary desserts, such as toasty, nutty pistachio cake and gooey, warm sticky date pudding. What happens in between? Plenty of drinking, namely wines on tap that ensure you can try before you buy.
