Since original chef Chuy Valencia left Lakeview’s Chilam Balam, its owner, Soraya Rendon, has not been whiling away her days. She promoted longtime cook Natalie Oswald to head chef, and together, they opened this sequel in West Town. Like its Lakeview sibling, Shaman serves inventive Mexican small plates, like grilled cobia with quinoa, delicate shrimp enchiladas and meaty mahimahi ceviche. Portions are small, but each plate is so packed with flavors and textures, it’s a satisfying experience nonetheless.
