Do you know what you’ll be serving at the barbecue?
Something delicious and seasonal. [Laughs] But no, I don’t know yet.
Summer is different for you because North Pond is so tuned in to the season. Is it even more stressful because there’s more produce to work with?
The conventional restaurant pattern is to be slower, but because we’re in the park it tends to be our high season. We’re really fortunate because most restaurants can’t take advantage of the plethora of product growing in high season. But I can. That’s the stress—not so much in the diversity of the product but in the volume.
What do you consider a perfect summer day?
A day off with the restaurant closed. [Laughs] It could even be raining, I don’t care. There’s no stress there.
